1Sour Cream

2tbspCotija or Feta Cheese

Step 1
In a small bowl, whisk olive oil with half the quantity of cajun powder, paprika powder, garlic and onion powder. Add salt and pepper to taste.
Step 2
Place each cob on a piece of foil. Brush generously with the mixture, and then wrap it in the foil.
Step 3
Transfer the corn to a baking pan and bake in the oven for 30 minutes at 425 F. Brush with the spices mixture and bake for another 20-25 mins.
Step 4
In a small bowl, mix mayo, sour cream, left over cajun, and paprika, lime juice, salt and pepper to taste.
Step 5
Take the corn cobs out of the oven, let them cool slightly and brush with the mixture.
Step 6
Top with crumbled Feta or cotija cheese, chopped cilantro, cajon, serve warm.<br />
