Ingredients
Okra
5cupBacon cut into ½/2-inch pieces
4Sweet onion, diced
1Garlic cloves, minced
315 oz can-crushed tomatoes with basil
115 oz can of diced tomatoes
11 oz can of diced green chiles (mild or hot)
4Apple cider vinegar
1tbspBay leaves
2Salt
1tspBlack pepper OR crushed red pepper flakes
1tspDried thyme OR oregano
1tspChicken stock

Stewed Okra and Tomatoes is a classic Southern dish! Flavored with bacon, onion, garlic and cider vinegar, you know these vegetables are bound to be good!
Step 1
In a large skillet, cook the bacon until it starts to get crispy, and the fat is rendered, about 5 minutes. Remove the bacon and reserve drippings in skillet.
Step 2
To the dripping, add the onion and garlic; sautee for 5 more minutes.
Step 3
To the onions add crushed tomatoes, diced tomatoes, vinegar, green chiles, bay leaves, salt, black pepper (or pepper flakes) and thyme (or oregano). Mix well, then bring to a gentle boil. Immediately lower the heat to medium-low and simmer uncovered for 10 minutes.
Step 4
Add the frozen okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender, for about 7-8 minutes.
Step 5
Remove the bay leaves. Season with salt and pepper, to taste. Serve immediately.
